Here are some tips from an experienced gluten-free mom.

Want a great tasting lasagna recipe that everyone, including the kids, will love?  Check it out:

Garlicky Cheesy Beefy Lasagna

  • 1 package Tinkyada Brown Rice Lasagna noodles
  • 1 lb. ground beef
  • 1/2 white onion, chopped
  • 3 garlic cloves, minced or finely chopped
  • 2 jars Marinara Sauce
  • 2 8 oz. blocks of Monterey Jack cheese, sliced
  • Parmesan cheese, fresh or canister style

 

Preheat oven to 375.

Cook lasagna noodles according to package directions.  

Brown ground beef with onions and garlic.  Drain.  Return to pan, add marinara sauce and heat up.    

In a 9 x 13 casserole dish, place a layer of 4 noodles, slightly overlapped.  Place a layer of cheese, 6 slices.  Spread enough marinara sauce/beef mix to cover the cheese and noodles and sprinkle parmesan over all.  

Repeat these steps 2 more times.  Place in pre-heated oven and bake for 20-30 minutes or until bubbly.  After baking, let sit for about 5 minutes, then serve!

Take Note!  For this dish, I typically use Barilla Marina Sauce, which is gluten-free and superb.  The portions are, as with any recipe, up for debate.  I like lots of garlic.  Lots.  Sometimes I use 5 or 6 cloves, or, if I don't want to clean my garlic press, I use 3 to 4 tablespoons of chopped garlic in the jar.  I'm all about simple!  

This lasagna is great served with a fresh garden salad and, of course, gluten-free garlic bread.  Try Chebe brand gluten-free bread sticks, spread some butter on top and add some garlic salt.  Mmmmmm.
